Lou Cooperhouse has led at nearly every scale of the food industry, from global multinational companies and family-owned businesses to university innovation programs and venture-backed companies he founded. Over four decades, he has worked at the intersection of food innovation, entrepreneurship, and technology commercialization, helping organizations turn emerging ideas into market opportunities.
Today, Lou is Founder, President & CEO of BlueNalu, a global leader in cell-cultivated seafood, and Founder & CEO of Food Spectrum, a global strategic consulting firm. Previously, he founded and led the Rutgers Food Innovation Center for nearly 15 years, creating a new model for food-industry entrepreneurship, business incubation, and economic development. Under his leadership, the Center was recognized as Business Incubator of the Year by the International Business Innovation Association (InBIA), designated as a national model by the USDA, and established the first certified food-industry Soft Landing programs supporting international companies entering the U.S. market.
Earlier in his career, Lou served as President & COO of F&S Produce; co-founder and CEO of MenuDirect Corporation; and held leadership roles with Campbell Soup Company, ConAgra, and Nestlé-funded Culinary Brands. Across these roles, he helped commercialize emerging food technologies, including sous vide, high-pressure processing, and modified-atmosphere packaging, and led the development of the first comprehensive gluten-free product line worldwide.
Beyond operating roles, Lou has shared his expertise globally through hundreds of industry presentations on food trends, disruptive technologies, and innovation best practices. He has built entrepreneurship programs and advised innovation initiatives across the United States and internationally, including work in Uganda, Nigeria, China, Israel, and Hawai'i. He has also testified before the U.S. Congress on innovation and entrepreneurship best practices, contributing to the broader advancement of programs supporting business growth and commercialization.

Lou holds an M.S. in Food Science and a B.S. in Microbiology from Rutgers University, and has served as an Adjunct Professor at the Rutgers Business School.
